Sweet and Spicy Spaghetti Squash

I’ve told you all about my struggles with meal prep before. Sometimes I want to make an elaborate multi meal plan where I plan for every meal and snacks of the week and sometimes I’m just struggling to make one meal a day. This week I was struggling hard. I wanted something easy and relatively healthy. So I went to one of my meal prep staples, the spaghetti squash. I cooked the squash like I almost always do. I sliced it length ways, scooped out the seeds, covered it with salt, pepper and a good drizzle of olive oil. Then I baked it in the oven for 45 minutes to an hour at 350. This time I spiced it up a bit and added some chilli flakes.


While the squash was cooking I cooked my meat. I generally use some form of ground meat; hamburger, turkey. pork or chicken just because its easy to find and goes on sale quite frequently. Its super easy throw it in a pan with a little olive oil and a few spices. Once the squash is done you scoop it out mix it with the meat mixture then you can throw mixture in a baking pan, top with cheese, and bake for 10-15 minutes. If your pressed for time just top with the cheese and serve it right away.


You’ll notice below when I list the ingredients that you’ll need I don’t really list anything sweet, but I’ve called this recipe Sweet and Spicy Spaghetti Squash. The curry powder adds just a hint of sweetness to offset the other spice flavours.

What you’ll need

1 Medium Spaghetti Squash

1lb ground meat, your choice

A handful of parmesan and cheddar cheese*

2 Tbs garlic powder

1 Tbs onion powder

2 tsp cumin

1 tsp chilli flakes, plus a sprinkle more for the squash

2 tsp curry powder

Salt and pepper to taste

Olive oil

Slice the squash, scoop out the seeds, sprinkle with salt, pepper and chilli flakes and then drizzle with olive oil. Place with the cut side down on a lined cookie sheet and bake a 350 for 45 minutes to an hour.

While the squash is cooking heat a frying pan over medium heat, add a drizzle of olive oil and your meat. When the meat is almost cooked add all of the spices and continue cooking.

Once the squash is cooked scoop it out with a fork and mix with the meat mixture. If you have time pop the mixture in a baking pan, top with the cheese and bake for 10-15 minutes at 350. If you don’t have the time just top with cheese and serve.

*Sometimes I only use one kind of cheese, if thats what you prefer just use 2 handfuls
