Oh my goodness, I’m finally back on schedule! It feels good to have a bit of routine back. With that said I’m still living out of boxes but that’s only for another week, we’ll talk all about that in a later post. This week I want to talk about cookies.
I’ve been making these cookies for years, so long that I can’t remember when I first started. I could seriously make these every week and I could probably eat them all by myself every week. To prevent serious weight gain and sugar overload I’ve limited myself to only making them in the fall.
Unfortunately I can’t take credit for the invention of this recipe. My friend Holly gave me the recipe well over 10 years ago and I’ve been making them ever since. This recipe is almost too good to be true, it only has 3 ingredients, it takes less than an hour to make from start to finish. including clean up, and the results are fantastic.
I whipped up a batch of these to take to work on Halloween eve and I knew I had to share them with you guys. My official taste testers coworkers also got to sample the cookies and one person described them perfectly “they’re like little clouds of fudge”. That might seem like a conflicting statement but somehow these little beauties manage to be light and fluffy like a cloud and rich and dense like good fudge.
Ok, ok enough of me blabbing on. Here is what you need
1 Box spice cake mix
1 Can pumpkin puree
1 bag of chocolate chips
That’s it just three things. Now all you have to do is throw them in a large bowl.
Give everything a good stir.
Now spoon them out on a large cookie sheet lined with parchment paper and bake at 350 for 12-15 minutes depending on your oven.
All that’s left to do is enjoy!
My girls didn’t get to help me make these, Sophie wasn’t interested and Maddie is still on vacation at my parents but I want to show you what they’ve been up to this week.
