This week has brought much needed rain and cool nights. The change in the weather has Maddie, Sophie and I in full cuddle mode.
With all this cuddling going on I wanted something comforting for supper. I think a good soup is like a hug in a bowl and anyone who knows me knows I love a good hug. This week I wanted to try a blend of my chicken noodle soup and tomato soup but I also wanted to try a few new flavours. I played around with a bunch of ideas in my head and I finally settled on garlic, ginger, jalapeño, cabbage, chicken and tomato. I know its a bit of a wild bag but trust me this ended up being a super tasty and easy recipe.
What you’ll need
1 L Tomato Sauce
1 1/2 Large red onion
4 Cloves garlic
1 Knob Ginger
4 Large jalapeños
1/2 Small green cabbage
2 Large Chicken breast
1 Cup Chicken stock
1 Tbs salt
1 Glug olive oil
Chop the onions, garlic, ginger, jalapeños, and cabbage. In a large pot cook the onion, ginger, garlic, and jalapeños with a good glug of olive oil. Once everything has cooked down a bit add the cabbage and salt.
Once everything is cooked down like the photo above add the chicken stock, and the tomato sauce and bring it to a boil and then turn it down to a simmer.
For your chicken you have a few option you can use a rotisserie chicken, you can roast your own, or you can buy pre shredded chicken whatever option you choose add it to the pot after everything has been simmering for about 10 minutes. Let the soup simmer for another 30 minutes then serve and enjoy.
