This week I went to a potluck BBQ. I kept going back and forth about what I was going to make, a salad, a dip, cinnamon rolls or something random. I finally settled on loaded baked potato dip. I’m a huge fan of potatoes, they are super versatile and tasty but there isn’t a single potato in this recipe, it just tastes like there is. I’ve had people argue with me when I’ve told them that there are no potatoes in this dip.
This recipe is so easy to throw together, its so easy that I’m not sure it can really be called a recipe. Its really just a bunch of things you throw in a bowl, stir and serve. Thankfully its easy to double or half. When my younger brother lived with me I always had to make a double batch if I wanted any.
Maddie is always happy when I make this. She always on clean up duty.
What you’ll need
2 Cups full fat sour cream*
2-3 Cups shredded cheese – I use old cheddar or a cheddar mozzarella mix
1 Bunch green onions chopped
1/2 Cup bacon bits**
Trow it all in a bowl and mix. If you’re feeling fancy save a little cheese, bacon and green onion to sprinkle on top.
*Trust me on the full fat part you need the thick stuff. You can also substitute full fat plain greek yoghurt
**If you love bacon feel free to add more than 1/2 cup. If you’re not a fan of bacon bits but love bacon just fry your own and chop it up.
Sophie Cat couldn’t be bothered to come join Maddie and I while we were in the kitchen. She was too preoccupied exploring the furniture.
