This past week I wanted two things to happen. 1) I wanted a lazy Sunday. 2) I wanted to eat some delicious nachos on that lazy Sunday. Specifically I wanted to eat the delicious nachos that I posted on my about me page.
So this is the point where I would usually post lots of photos of how I made these beauties but I messed up a bit. Maybe I was sleep deprived from night shifts. Maybe I was sleep deprived because this cuddle monster cried all morning because she couldn’t fit on the bed.
Maybe I was just really hungry and totally forgot to take pictures. I’m not really a betting woman but if I was I would be putting my money on that last one. I may have forgotten to take pictures of the process but you better believe I remembered to take a photo of the finished product.
Now these are not your regular nachos. These are BBQ chicken nachos. BBQ Chicken nachos made with pickles and feta cheese! Yes you read that right pickles and feta cheese. I know those things don’t usually go together but you need to trust me here. This is the perfect blend of sweet, salty, cheesy and crunchy.
I’ve been making these nachos for a long time almost 10 years. In that time I’ve tried a lot of bbq sauces, everyone I’ve tried has been delicious on these nachos but one has reigned supreme. Unfortunately I haven’t been able to find it in my small part of Canada. If you can find Weber’s Buzz’n honey bbq sauce I strongly suggest that you buy it. This sauce is so good on these nachos that my friends and I refer to it as the magic bbq sauce! In no way have they endorsed this post, these are 100% my opinions, but if weber’s wants to send me a case I would be over the moon!
What you’ll need
1 medium bell pepper
1 medium onion
1 bag of your favourite tortilla chips
2 cups Shredded cheese you can choose your favourite kids but I like to mix mozzarella and cheddar
3/4 cup crumbled feta cheese
4-6 diced dill pickles
1/2 cup bbq sauce*
2 Tbs honey*
1/2 – 2 chicken breasts shredded
The directions for this recipe are pretty easy. Chop the pepper, onion, pickles and feta. Shred the cheese and chicken. Mix the honey and bbq sauce. Layer your ingredients, drizzle a little bbq sauce on each layer. Bake in a oven preheated at 350 for about 15-30 minutes or until the cheese is melted. The more layers you have the longer you will need to leave them in the oven. The top photo was a four layer monstrosity it took about 40 minutes to bake.
One pan of these should make enough for four people
*If you use Weber Buzz’n honey bbq sauce omit the honey.
